Just a little something to nibble on that I invented…
It’s mango season and there’s always a bag of them in the conference room at work and more from friends and neighbors. If you have a sweet one, try this…
- Your favorite white-fleshed fish (Ono, Opah, etc) cut into strips, drizzled with a little oil and given a dose of salt, pepper, chili powder, cumin and onion powder. Let it sit in the fridge for a while to get right
- Street-style corn tortillas
- Sauce made with 1/2 mayo and 1/2 your favorie salsa (I like the “garlic lover’s” at Safeway)
- Saute the fish, heat the tortillas in a little vegetable oil and build your taco with:
- The salsa sauce you made
- Strips of fresh mango
- Slivers of red radish
- Finely-chopped fresh chives (you can go old school with cilantro but the chives give a little onion-like lilt)
- Squeeze of fresh lime
- Mrs. Blogmeister likes to add a little Cholulua hot sauce, too
If you REALLY want to get your summer on, I have another simple invention you might try. Put in a blender:
- 4 shots of good tequila (Kirkland Anejo is the best combination of taste and affordable that I’ve found)
- 1 shots of Cointreau
- Juice of 1/2 fresh lime
- 2/3 bag of frozen peaches
- One drinking glass of ice cubes
Blend on the “smoothie” setting, serves two.
